Usually, Holly is the one who shares all the great dishes on this blog, but I have a new affordable healthy dinner recipe that I’m absolutely obsessed with, so now it’s my turn.  I have to give Holly a pat on the back for her chocolate depression cake a couple of weeks ago. It was so good, and so many people have said that they’ve tried it out since she shared the recipe that I decided it was time for me to show my stuff in the kitchen too.

My Favorite Affordable Healthy Dinner Recipe

To be honest, my favorite affordable healthy dinner recipe tends to change from one moment to the next but right now, I’m absolutely obsessed with this one. It doesn’t sound like it’s something that would keep things within a small shopping budget, but it does.  Mainly because it gives lots of choices for options to select the cheapest options or buy in bulk for a lower overall cost.

Making My Affordable Healthy Dinner Recipe as Cheap as Possible

The following are the ingredients that make up this recipe. It’s a skillet chicken with feta cheese, so it sounds like it should be super pricy.  But it’s really not!  Especially when you use my tips along the way.

Ingredients

  • ½ pound chicken cut into 1-inch pieces (buy on sale or get a whole chicken and cut it up yourself. Yes, it’s a nuisance, but it’s 10 minutes and huuuuge savings. Also, frozen whole chickens are usually cheaper than fresh ones)
  • Pinch of salt
  • Dash of pepper
  • 2 teaspoons extra virgin olive oil
  • 1 cup asparagus cut into 1-inch pieces (frozen is much cheaper than fresh and tastes the same here)
  • 1 garlic clove, minced
  • 3 small tomatoes, chopped (get whatever’s on sale. I like plum tomatoes, but whichever ones cost the least are best)
  • 3 tablespoons of milk (dairy or oat milk is best here)
  • 2 tablespoons of goat cheese, crumbled (plain or herbed – I buy the cheapest one and portion it out for several dishes, freezing it)
  • Rice or pasta, prepared (I choose brown rice or whole grain pasta purchased on sale)

Directions

You’re going to be so impressed at how easy this affordable healthy dinner recipe is!

  1. Season the chicken with salt and pepper. Heat oil in a large skillet over medium heat. Sauté the chicken 4-6 minutes until it’s not pink anymore. Remove from the pan but keep it warm.
  2. Add he asparagus to the pan and cook it, stirring regularly until it is tender. This won’t take more than a couple of minutes or so, so don’t leave the kitchen. Add the garlic and cook it with the asparagus, still stirring, for about 30 seconds.  Stir in the tomatoes, cheese and milk.  Stir it up and cover for 2 to 3 minutes until the cheese starts softening or even melting.  Add the chicken back to the mixture, stirring it until everything is mixed well. Serve it on top of the rice or pasta. Enjoy your fast, easy, affordable healthy dinner recipe!
